2011 is really a strange vintage : malolactic fermention is already finished in the reds! In an average year, it occurs at the end of december, and sometimes (2005) we have to wait for the next summer...
Now, we can have a real idea of what the wines will be : lots of fruit, low acidity that make them taste like they were one year older. with some ageing, they would drinkable in the same timing as the 2010! I was speaking of the "tuffe" cuvée, the classical one, Lisagathe , Fours à chaux and Fevettes will go straight to new "foudres" and , there, they 'll have to wait at least 18 months...
Some trouble with the whites : end of fermentation is very slow, there are still some gramms of sugar to transform and we have to be patient , wich is not my "cup of ....wine" :-)
We are planning to bottle in early 2012,the best 2010 reds, they do taste very good now.
